KAHLUA & CHEESECAKE RECIPE
VALENTINES DAY DESSERT
Nothing says I love you like cooking for the one you love. While many may do this on a regular basis, rarely does it seem that many a great cook take the time to make a decadent dessert. One of the wonderful things about this recipe is that it includes making your own homemade Kahlua! If you’re in Maui, of course, you can just buy a bottle too, but it sure is fun to enjoy cheesecake and have a wonderful adult beverage to sip on even if you’re not visiting Maui for Valentines Day…yet!
Homemade Kahlua Recipe
1 – 12 cup pot of strong coffee. We like Hawaiian coffee (Lion Brand Chocolate Macadamia Nut Coffee)
2 lbs of brown sugar (dark brown if you like molasses flavor or light brown)
4-6 Tbls of vanilla extract
1 bottle of 190 proof Everclear (or vodka)
Bring coffee to a boil in a saucepan and gradually add 2 lbs of sugar till dissolved. Let cool to room temperature. Place pan in refrigerator or ice bucket to speed up cooling. When completely cooled add vanilla and alcohol. It is now ready to enjoy!
Kahlua Cheesecake Recipe
Crust:
1 ⅓ cup graham cracker or Oreo crumbs
¼ cup softened butter
1 Tbls Sugar
Mix ingredients and press into pie pan to create a crust about ¼ inch thick. Be sure to cover the bottom and sides
Cheesecake Filling:
1 ½ cups chocolate chips (your favorite)
¼ cup of Kahlua
2 Tbl butter
1 cup sour cream
2 – 8 oz package of cream cheese
2 eggs beaten
⅓ cup of sugar
In a small saucepan over medium heat melt and combine chocolate, Kahlua and butter.
In a bowl mix sour cream, eggs and sugar. Blend well then beat in cubed cream cheese until blended smooth. Gradually blend in chocolate mixture.
Fold mixture into pie crust and bake at 350 degrees for 35 minutes or until center is barely set. Turn off oven and let stand inside with the door open for 15 minutes. Remove and let stand at room temp for 1 hour. Refrigerate for 2 hours or overnight.
Serve cold with a drizzle of hot chocolate sauce or fresh berries. Oh, and enjoy a White Russian with your dessert…
